Hello everybody! As you might have seen I had a shoutout for any guest bloggers that wanted to post their things on my little Internet corner and I was so pleasantly surprised by so many of you reaching out! All so talented and eager, I love it.

I couldn’t think of a better place to start than with this amazing post on healthy soup recipes from Jasmin. She has been a total sweetheart to work with and even though we agreed on a much later date due to her swiftness here we are, almost a month earlier. MY 3 FAVORITE TO GO SOUP RECIPES

Hello everybody!

I think I should properly introduce myself before I start rambling about my favorite to go soup recipes. My name is Jasmin & I’m a lifestyle blogger from the land of the polar bears and eternal winter. You can find me over at littlethingswithjassy.blogspot.fi if you fancy a read after this.

I’ve recently started paying attention to what I actually put in my mouth, thanks to this little miracle who’s growing up so fast inside of my womb. I didn’t use to keep anything to eat with me while I was doing these crazy 10-hour work shifts, so now that I’m actually getting hungry during a day out there I wanted something light and yet filling to take with me to work.

I was searching for a quick lunch recipes from the World Wide Web and I wanted to try how they would taste and guess what? I really do adore every single one of them. Sometimes it’s even hard to decide which soup to make for the next day haha!

CARROT SOUP WITH FETA CHEESE

This one has been pretty close to my heart and it’s so super easy and quick to make too!

This recipe will serve four, but you can always make a smaller portion. I usually make soups for a couple of days at once, so I won’t have to be making soup every single night.

INGREDIENTS:

  • 1 onion
  • 2 garlic nails
  • 1kg carrots
  • 1l water
  • 3 tablespoons of chicken or vegetable fondué
  • 150g feta cheese
  • salt & pepper for seasoning
  • 1tablespoon of oil

HOW TO ROLL WITH IT?

  1. Slice garlic & onion to small pieces and sweat them in the oil.
  2. Peel & slice the carrots and add them in the pot.
  3. Add water and fondué to the pot & boil until carrots are cooked. It’s like cooking potatoes you know, until they’re soft enough to mush.
  4. Add shredded feta cheese to the soup and use hand blender to make it smooth. You can add water if the soup is too thick.
  5. Season with salt and pepper, if you want of course.

TIP: If you want to go vegan, drop the feta cheese & use vegetable fondué.

TIP2: Serve with fresh bread.

SWEET POTATO SOUP WITH COCONUT MILK

This recipe also serves four but as we noticed on the one recipe earlier, it’s okay to make smaller portions haha! This recipe was my absolute favorite when I was about 18 weeks pregnant and learned that my baby is a size of a sweet potato. I don’t know why, maybe I wanted to feel close to it.

INGREDIENTS:

  • 1 onion
  • 2 garlic nails
  • 500g sweet potatoes
  • 1 jar of tomato purée
  • 1/2 red chili (completely optional)
  • 3 tablespoons of vegetable fondué
  • 4dl coconut milk
  • 6dl water
  • 2 tablespoons of oil
  • salt & pepper for seasoning

HOW TO ROLL WITH IT?

  1. Remove seeds from the chili, peel onion & garlic. Cut them in to small pieces and sweat them in the oil.
  2. Peel the sweet potato and slice it to small cubes. Add it to the pot with water, salt & fondué. Boil them until sweet potatoes are soft, then add tomato purée and coconut milk. Poach them for a while.
  3. Mush the soup with a hand blender, add water if the soup is too thick.
  4. Season with pepper if needed.

TIP: Serve with fresh cheese bread.

SPINACH SOUP WITH BASIL

This is an ultimate green soup. It’s also super delicious!

This recipe also serves four, so gather your friends and enjoy the meal.

INGREDIENTS:

  • 1 pot of fresh basil
  • 160g spinach
  • 1 onion
  • 2 tablespoons of oil
  • 2 courgettes
  • 5dl vegetable broth
  • 2dl food cream
  • white pepper & salt for seasoning

HOW TO ROLL WITH IT?

  1. Slice the onion and sweat it in the pot until it’s soft.
  2. Slice courgettes to small pieces and add them to the pot, sweat for a little while.
  3. Add spinach & broth to the mix. Let it poach until vegetables are fully cooked.
  4. Add cream and basil. Use hand blender to make the soup smooth.
  5. Season with salt & pepper.

TIP: Serve with boiled eggs & fresh bread.

And there you have it! Three simple and quick to go soups to take with you to work or school. They’re also super healthy so I guess I’ve covered that part where recipes are supposed to be fashionable.
